Daily updates on the 100 dinners in 100 days is not happening, but I’ll try and pop on weekly ish. Here’s our week 1 meal update.
Day 2 was an easy one, we did a roast chicken with roast potatoes, parsnips and carrots. And my husbands gluten free Yorkshire puddings that the kids love.
Leftover chicken and the rest of the mascarpone just cried out creamy chicken pasta to me, so that’s what we went for. With green beans and pepper for everyone except Mr fussy, who had his standard sweetcorn.
This was another meal we have often. Fishcakes (fishfingers for the kids), with mash and cauliflower cheese.
Omelette, mash and baked beans. This was a hack from my mum to do the omelette in the oven. So I just put 8 eggs whisked, tuna, sweetcorn, and pepper in a round oven dish and baked for 40 minutes. Easy and delicious.
Quorn bolognaise: I made the sauce in the slow cooker with onions, pepper, carrots, garlic, chopped tomatoes and herbs. I whizzed it up with the stick blender halfway through the day and added quorn mince. Then at dinner time I just had to cook up the spaghetti and gluten free spaghetti. A little Parmesan on top too.
Sunday’s are often roast days, so it’s going to be a challenge to fill these. But today we went for pulled pork burgers, with roast potatoes and carrots. The pork took 8 hours to cook but it was worth it. It was lovely and everyone enjoyed it immensely.
We had leftover pulled pork so we had wraps with the pulled pork, fried onion, courgette and peppers, refried beans, cheese and of course sweetcorn all in tortilla wraps.
That brings us to today. Today we’ll be having pesto pasta. Well done if made it to the end of the week 1 meal update. It was a few more days than I envisioned. Check back soon for more.
