I know it’s the middle of May and the keen mathematicians among you will realise it’s been way more than 1oo days. But we officially have 100 meals completed. We skipped Friday’s as that is the day we eat separately from the kids. We also missed out the week when we were on holiday and any days we were out for meals.
This was a challenge set by my kids in the new year, to cook 100 different meals over 100 days. At first it seemed a daunting task to think of 100 different meals to cook, when apparently 1 in 4 Brits can only cook 3 recipes. But I already knew I could do way more than that. And I actually really enjoyed it. Yes, it took up more time than usual, but I discovered some great recipes and generally had fun doing it.
There were lots of great meals, like the above deep pan pizza by Becky Excell, sweet and sour chicken, Japanese Katsudon, and fishfinger curry. Actually we made a lot of meals from her books in the end. They were so quick and easy, and gluten free. But the real game changer from her was the flat bread recipe; which could also be used as a pizza base. It literally has 2 ingredients and is so easy to make. We will be using that one loads. I would really recommend her books and her blog if you follow a gluten free diet.
